momma trish: she's not a regular mom, she's a cool mom

Kinda like Gilmore Girls, but different.. Their coffee is our tea, Rory's Yale was my CIA, and Lorelai's inn is Trishy's teahouse. My mom and I have that same bond though, it's weird going a day without talking at least three times, we egg each other on to buy the things we probably don't need, and she'll always be there to listen. She is the Olivia to my Elliott, the Kit De Luca to my Vivian Ward, and the wine to my glass.

During quarantine, my mom decided to buy the teashop we had been going to since I was a kid after the previous owners retired. We spent our days at home baking scones, testing out cake recipes, writing up menus, and still to this day text each other random ideas for what may be next. I take the chance to brag about my mom in any conversation.. want a cup of tea? I'm going to tell you about my mom's teashop.. oh you had the best scone of your life the other day? please, pull up a chair to Teapots and Treasures and let me change your mind. This woman is the reason I wake up every day and try and push myself to be better, and she is also the person who taught me to never take this life for granted, she is also the reason I have ridiculously high standards. We both show our love through food, whether it be cooking a meal for family or friends, we're the first to tackle the kitchen and I wouldn't want it any other way.

So, today we're cooking Chicken Marsala! I asked Trish to text me the recipe for her Chicken Marsala and decided to copy and paste it directly here as if she sent it to you herself.

  1. Egg wash and flour thin sliced chicken cutlets.

  2. Brown in a pan with oil. After all the chicken is done, drain the oil and wipe out the pan. Return to the heat with a stick of butter.

  3. Add mushrooms (baby bellas). Sauté until brown, season with salt and pepper. Drain any excess water and then add 1 cup Marsala wine and 1 cup beef stock. Add some thickener (Wondra works just fine).

  4. Let simmer for a bit and add chicken back in for about 10 minutes.

  5. Enjoy. I make mashed potatoes or pasta on the side. ❤️

Now, in true Trish fashion, you must end the night with a bowl of Häagen-Dazs Chocolate Chocolate Chip ice cream or some Swiss Fudge cookies, if you can get your hands on them.
